My Super Easy Roast Lamb Recipe
Grab a Leg of Lamb from the supermarket (mine is about 1.5kg bone in)
Make sure your herbs are stocked - I use Rosemary, Thyme, Oregano, salt and pepper.
Instructions:
Pre-heat the oven to 180 degrees celcius on Roast function
Unpack the lamb
Line a baking dish with tin foil/baking paper to save you washing up (an important step when you're a time poor new parent!)
Put lamb in the dish
Cover lamb in herbs, salt and pepper (they go all crispy it's delish)
Place in middle of the oven
Set a timer for an hour and a half (based on my 1.5kg weight)
Go out for a walk!! Do housework, crack a wine... your choice!
Remove from the oven when cooked and leave to cool before slicing
Meal Prepping:
Slice into 100-150g portions and place in Tupperware for the week
Add a salad/ veggies if you want to use it as a main meal
Serving it up:
My favourite is serving this with a Greek Salad...
Or in the middle of winter, Mediterranean vegetables baked in the oven with feta and a can of chopped tomatoes, with herbs to match your lamb!
