Gabi's Delicious Hazelnut Dukkah Recipe


Confession time... this isn't one of mine, but instead this recipe belongs to Gabi from The Kitchen Garden. Check out her website (where you can find all her other recipes plus garden tips!).


Let's talk about dukkah. This Egyptian-born spice blend is not just a treat for your taste buds, but also a crunchy, nutritious addition to pretty much anything you're munching on.


Why are we talking about dukkah? Because (in case you hadn't noticed) we hate boring salads. Gabi gave me a jar of this for Christmas and it's been on nearly every salad I've made since! Note... must ask Gabi if I can buy some more dukkah!


Anyway, let's get into it...



Gabi's Delicious Hazelnut Dukkah Recipe


Ingredients:

  • 1/2 cup hazelnuts

  • 6 tablespoons coriander seeds

  • 3 tablespoons cumin seeds

  • 1/4 cup sesame seeds

  • 1 tablespoon dried thyme

  • 1/2 cup whole almonds

  • A pinch of salt and pepper


Let's Get Cooking:

  1. Kick things off by heating your oven to a cosy 160°C (320°F).

  2. Toss the hazelnuts, coriander seeds, cumin seeds, sesame seeds, dried thyme, and almonds onto a baking tray. Sprinkle a bit of salt and pepper over them for that extra zing.

  3. Let these guys toast in the oven for about 20 minutes. Keep an eye on them; you don't want them to burn.

  4. Once they're golden and smell fantastic, take them out and let them cool down. Patience is key here.

  5. When they're cool, whizz them in a food processor until they're just the right amount of crumbly.

  6. Store it in a jar, and boom, you've got your very own dukkah for a whole month.


This hazelnut dukkah isn't just for show. It adds an amazing crunch to your meals and packs a nutritional punch with its nuts, seeds, and herbs. Sprinkle it over salads, soups, or even your morning avo toast for an instant upgrade.
