  • Eggs: 6 large

  • Sun-dried Tomatoes: 50g

Notes:

  • Cheese Variety: Feel free to use any cheese you OR your kids prefer. Grated cheese is a time-saver if you're in a rush.

  • Sun-dried Tomatoes: These are preferred over fresh tomatoes as they are less messy in a lunchbox and offer a more concentrated flavour.


Method

  1. Preparation: Preheat your oven to 180 degrees Celsius (bake or fan bake setting). Take six muffin cases – rubber baking cases are recommended for easy removal without the need for paper cases.

  2. Mix the Ingredients: Break the eggs into a bowl. If your cheese isn’t already grated, grate it now and add it to the eggs. For a touch of pizza authenticity, sprinkle in some oregano.

  3. Assemble the Bites: Evenly distribute the egg and cheese mixture across the six muffin cases. Top each one with sundried tomatoes – you can either leave them whole or chop them, depending on your preference.

  4. Bake: Place the muffin tray in the oven and bake until the bites turn firm and are slightly golden on top. This usually takes about 15-20 minutes, but keep an eye on them to avoid overcooking.

  5. Cool and Store: Once baked, remove the tray from the oven and let the pizza bites cool. Store them in airtight containers in the fridge for easy access throughout the week. For on-the-go convenience, pack 2-3 in small boxes – they’re perfect for a meal or snack when you're out and about!
