6 Ingredients, Child Friendly & Only Around $20
Christmas Tree Platter Boards seem to be everywhere at the moment... or maybe that's just what instagram's algorithm has decided I might like?
This elaborate looking creation is also super simple. It only has 6 key ingredients - with additional toppings if you want them.
Let's Get Into The Recipe
Key Ingredients
1 Whole Cucumber (or more if you are feeding lots of people)
Cherry Tomatoes
Capsicum
Red Onion
Olives
Feta (SNOW - crucial ingredient)
Optional Additions
Basil/ Oregano/ Rosemary - your favourite Mediterranean Herbs
Lemon Star & Slices for dressing
Salt & Pepper
Olive Oil (for serving)
Method - Read On
Step 1 - Building Your Base
Chop the cucumber and arrange in layers, starting from the top
(I've thrown some basil at this but that's totally optional)
Chop and arrange some red onion tinsel (can't quite believe I'm writing this but here we are...)
Step 2 - Adding Decorations
Tips
Cut Cherry Tomatoes in half so that they easily sit in the salad
Choose a mixed box for added colour (same price!)
Add whole ready pitted olives (lazy yes, but a salty and winning hit with the kids....)
Add capsicum 'tinsel' to the tree in the opposite direction to the red onion - seriously so much easier than it sounds.
Step 3 - Finishing Touches
And in my opinion the best part...
Add Feta Snow by simply crumbling it over the top of the tree
Feeling Fancy?
Whilst you've got it out cut some large feta cubes to make presents
Cut a slice of lemon to make a star and chop up the rest of the half to use to dress the salad when you serve it
Stand back and admire your handy work...
Cringe as hell? Sure! A great way to get kids (and big kids) to smile and get excited about veggies... even on Christmas Day - absolutely!
This whole thing took around 15 minutes from start to finish - absolutely winning formula to impress any Christmas visitors without slaving away over a hot stove.
