5 Ingredient Nutty Paleo ANZAC Biscuits


This is an alternative take on ANZAC biscuits originally made with oats, flour, sugar, coconut and golden syrup (ingredients that don’t go off quickly) and sent to army corps back in WW1.


Traditionally they contained barely any liquid ingredients to ensure they didn’t spoil on the way across the globe…


As we now have the luxury of eating them straight away, here is a sugar free alternative on the honoured tradition.

Today should be spent reflecting, and spending time together with friends and family.


Explaining Anzac Day To The Kids

I reckon getting into the kitchen together is a great way to explain to the kids the experiences their ancestors endured. What better way to explain the sheer distance that families were away from each other, and the love that they showed, by explaining how Anzac Biscuits came to be.

Paleo & Keto Friendly Anzac Biscuits

These biscuits are honestly just 5 Ingredients and ready from the oven in 15 minutes. They are paleo approved, refined sugar free, perfect for anyone on a ketogenic diet. They are also gluten free, dairy free... and taste surprisingly good considering. I was actually surprised they worked... but sitting here eating my second they're clearly going down OK. P.s. Scott said raisins would have been a good touch... noted for next year, honey!




How To Make 5 Ingredient Anzac Cookies

Ingredients:

🥜 1 Tbsp Natural Nuts (any work)

🥥 1 Heaped Tbsp Coconut Flour

🧈 1 Very Heaped Tbsp Nut Butter

🍯 1 Tbsp NZ Honey

✨ Optional: 1 Heaped Tsp Erythritol/ Natvia

🥚 2 x Eggs


All thrown together in a NutriBullet or food mixer…


I recommend adding Cinnamon and Vanilla Essence for flavour if you fancy👌🏼

Bake for around 15 minutes at 190 degrees.


They’re amazingly soft when they’re first hot out of the oven... 🙌🏼
