3 Ingredient Paleo Pizza Recipe



A deliciously uncomplicated grain free, low carb pizza base for anyone trying to steer clear of pizza but not wanting to miss out. Perfect for anyone who wants to enjoy a family pizza night or a dinner than isn’t just meat/fish and veggies.


Unlike other ‘healthy’ pizza bases this does not fall apart, taste awful or take hours to create. This recipe uses chicken mince packed with protein, eggs as perfect little parcels of protein and fat, parmesan for delicious flavour and to add a golden brown colour, and finally cauliflower to add texture and top the brilliant natural ingredient list.


Let's get one thing straight... Pizza is not unhealthy.

Enjoying a pizza by the sea in Italy after a long day exploring is food for the soul. Getting in your car to go and grab Domino's latest sugar laden 'bbq' special extra large pizza, when you aren't moving much, is a different kettle of fish.


It is the environment in which we eat these foods and how much we move that means a lower carbohydrate alternative can be beneficial for many of us.

Ingredients

Only 3-4 Key Ingredients:

200g Chicken Mince (Free Range & Organic if possible but by no means essential)

4 Eggs

20g Parmesan Cheese

Either add 100g additional chicken mince OR ½ Head of (a small) Cauliflower


Without toppings the base is around:

350 kcal, 38g Protein, 18g Fat, 7g Carbs (from the cauliflower)




Tips:

This is to (generously) feed two and so double this recipe for four.

Makes two individual pizzas or one big one to share.


Optional Ingredients & Flavours:

Salt & Pepper

Herbs of your choice – oregano, basil, garlic/onion powder

Butter or Coconut Oil



Toppings

Your favourite pizza toppings! But my recommendations are:

Tomato Paste/ Puree for the base

Mozzarella

Fresh Basil

Caramelized Red Onions (or any veggies of your choosing)

Chorizo/Salami

(Remember with all the protein and fat in the base you won’t need as many meaty toppings as usual)





Method


Making the Base

  1. Assuming you don't have a beautiful pizza oven...Pre-heat the oven to 200°c or higher (as high as it will go) on bake

  2. Line a large oven tray with baking paper (which will make it much easier to move the base)

  3. Using a blender/ nutribullet: roughly chop the cauliflower and throw in, followed by the eggs to make the mixture liquid, followed by the chicken mince and parmesan

  4. If there’s no mixer on hand to do the hard work for you simply grate the cauliflower and combine the ingredients well in a mixing bowl.

  5. Combine all the ingredients in any way you choose until the mixture is relatively smooth.

  6. Spread the base thinly onto the baking tray (about 1cm thick throughout)

  7. Pop the base in the oven by itself (for 20-30 minutes) or until the edges start to turn golden brown

  8. Remove the base from the oven and ensure it is cooked throughout

  9. Get ready to add toppings…


Pizza Toppings & Cooking


  1. Use the back of a spoon to spread the tomato paste on the base

  2. Tear mozzarella or grate any other cheese on to your base

  3. Add whatever additional toppings you fancy!

  4. Pop back in the oven until the cheese has melted and toppings are cooked the way you want them to be. If you have a pizza oven – even better! This will usually only take around 10-15 minutes.
