Naughty But Nice 3 Ingredient Summer Platter Recipes


So, some of you may remember some of these from the summer of 2020…gosh that feels like a lifetime ago. But some of these recipes are so good that having served them up to friends recently I thought they deserved another go…


So, above are sausages wrapped in bacon - this is cheating as it's such an english staple but it is a fun, easy, high protein go-to Christmas snack that I have some English heritage to thank you! Plus, they are a hit with everyone (Husky Labs included - no Ace, they are not for you!)


Many summer platter staples can contain more than you bargain for. Sweet Chilli Philly from the pot contains over 20 ingredients including sugar, thickeners and preservatives and many flavoured cheeses have similarly suspicious ingredient lists. So here are a few tried and tested festive platter favourites that you can make at home. The best part? They all have 3 ingredients or less!



DATES IN BLANKETS


Ingredients:

- Medjool Dates

- Blue Cheese

- Streaky Bacon

Method:

Remove the stone from the date and stuff with a small slice of blue cheese. Wrap each date in half a rasher of bacon. Bake in the oven or fry in a pan. And enjoy the sweet and salty deliciousness. For a veggie option stuff the date with a walnut, blue cheese and top with half a teaspoon of runny honey. Equally as delicious.




HEALTHY SWEET CHILLI PHILLY

Ingredients:

- Cream Cheese

- Chopped Chilli

- Local Honey

Method:

Put the cream cheese in a dip bowl. Mix a heaped tablespoon of chopped chilli with a teaspoon of runny honey and pour the mix over the top. It actually tastes better than the bought stuff (according to the girls at my recent hen party…).




FUN FLAVOURED CHEESE

Ingredients:

- Large block of Colby, Edam, Gouda or Cheddar

Pick Your Flavour:

- Cumin Seeds

- Cranberries & Orange Zest

- Chopped Garlic & Chives

Method:

Melt the cheese in a double boiler above a pan of boiling water. Mix in your herbs, spices or flavours. Pour into a butter dish or Tupperware container and put in the fridge to set. Enjoy!
